Nashville Wife’s Stuffed Peppers

Have you ever tried stuffed peppers? I hadn’t until I made them for the first time a couple years ago, and now they are one of my favorite meals. They’re decently healthy and easy to make, and the ingredients are fairly cheap. Here’s my recipe:

Stuffed Peppers

Servings 3

Ingredients

  • 1/2 lb ground turkey
  • Seasoned salt
  • 3 green bell peppers
  • 8 ounces tomato sauce
  • 1 tsp Worcestershire sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1-1/4 cups cooked whole grain rice
  • 3/4 cup cottage cheese
  • 1/4 cup shredded cheese
  • shredded cheese for tops (optional)

Instructions

  1. Brown ground turkey, adding as much seasoned salt as desired. (I use 1/2 teaspoon.)

  2. Wash and clean out peppers, and place on a baking sheet.

  3. Combine ground turkey, 1/2 of tomato sauce, Worcestershire sauce, garlic powder, onion powder, and cooked rice in a medium-sized mixing bowl. Add cottage cheese and shredded cheese.

  4. Spoon mixture into peppers. (Average-sized peppers should have room for about 1 cup each.) Spoon some of remaining tomato sauce over tops of peppers.

  5. Bake at 375F for 45 minutes, or until tender, basting with remaining sauce every 15 minutes. Sprinkle with additional shredded cheese, if desired.

      You don't eat anything else with it that's the whole meal. It's to fulling to eat anything else.

      I don't usually serve it with anything else, since it's pretty filling by itself, but it would be great with a salad. 🙂

      That's the kind of meal where you put a plate of raw veggies on the table and let everyone nosh. Carrots, cucumbers, radishes, cherry tomatoes, cauliflower… Sometimes to encourage vegetable consumption, I add a little dish of fat-free sour cream mixed with a generous amount of dried dill weed to make a very simple dip.

    You can use red, yellow, & orange peppers too!! Easy healthy recipe similar to one I've used for years.

    These are similar to the Greek dish Gemista.

    You could try using Feta instead of cottage / cheddar cheese and serve them with tzatziki

      I do love Greek food! Had a gyro with tzatziki the other day. It was great! Do you have Greek heritage?

      You could try this marinade with chicken breasts: tzatziki, lemon juice, garlic and olive oil. You let your chicken marinate at least 8 hours. Grill it on the BBQ. You can serve it with a salad, rice or potatoes. You can also cut your chicken in slices and serve it in a pita bread with tzatziki, and slices of tomatoes and cucumbers.

    That is a Greek recipe you should know. We use minced meat, rice, fresh onion, fresh garlic, fresh tomato sauce, parsley and olive oil to fill green peppers and tomatoes. I add mushrooms in the stuffing, too.

      Thanks for sharing that! Greek food is wonderful. Have you had moussaka? That was one of my favorite dishes as a child.

    I make this using ground beef, cooked rice, and an egg or two to bind them, depending on how much filling I'm making. Brown the beef, drain, add the cooked rice, and then put in the eggs, raw. Continue cooking & stirring over medium heat until the egg cooks. Add a little salt and pepper if you like, but I don't (sauce will be seasoned enough).

    I cut my peppers in half vertically and lay them in a baking dish. Then I stuff them with the cooked meat mixture and top with homemade tomato sauce (like making spaghetti sauce, but leave out or go more lightly on the Italian herbs). If you use pepper halves, the baking time is shorter, about 25-30 minutes at 350, covered. I top with shredded Italian cheese near the end of that time.

    Since the ingredients are cooked first, you can make this ahead and stop at any point, before stuffing or after. I've even baked them ahead and reheated them in the microwave at suppertime. We often have this when summer is ending and the peppers need to be picked before we say goodbye to the plants for the season.

    Ground beef it's not good to eat that's why see used Turkey meat.
    And also ground beef can cause cancer. They annonce that last year.

      I'd like to see the studies or reports that are claiming "ground beef can cause cancer." What kind of cancer? How much ground beef? What other factors might contribute? That just doesn't sound like an accurate statement without some hard scientific facts or reports in peer-reviewed journals to back it up.

      I've never heard from anywhere that ground beef can cause cancer. I think if a person eats too much RED MEAT that may not be good for the heart and all, but I don't agree with that statement that hamburger can cause cancer. There is way too much hogwash thrown around that people believe everything they hear!

      "They" (whoever "they" are) have tried for a long time to tie red meat to a higher incidence of colo-rectal cancers. Even grilled meat (any kind) was supposed to up your chances. But until my gastro doc tells me to leave the cow on the hoof forever, I'm not changing my eating habits (which includes low to moderate meat intake of any kind). Many of these cancer stories cannot pinpoint cause and effect anyway. Maybe the red meat eaters who developed cancer had family histories of it? Maybe they smoked? Maybe they had other bad lifestyle choices??

      Even the heart info is changing rapidly, as cardiologists are seeing more of an inflammation problem with hearts and blood vessels than a cholesterol problem. But they're still hashing it out among themselves before coming up with any new dietary guidelines. Statin drugs good…statin drugs bad…all sorts of opinions. Then there's the problem of where did the new info come from? A study funded by a biased drug company that wants to sell more statins? Or an independent, double-blind, controlled study that was then published in JAMA or JACC?

      Meanwhile, we all get a day older! But something's bound to get us all in the end, as we well know.

    I have made stuffed peppers for quite a long time my son and I love them. My recipe makes 5 good sized peppers. My ingredients includes ground cooked hamburger(better taste),shredded cheddar cheese, can diced Italian flavor tomatoes, cooked rice, basil, and 5 green peppers with tops cut and inside cleaned and rinsed out. YUM they're so good! –Stacey
