Mexican Street Corn Recipe

Have you ever experienced Mexican Street Corn? If you haven’t, you need to keep reading. It’s wildly delicious.

A few weeks ago, we had a big group of friends over for an outdoor meal. Mr. Handsome and another guy cooked the entire meal over the fire (it turned out great!), and Mexican Street Corn was one of the dishes they made.

Start with some frozen corn. We prefer Trader Joe’s Super Sweet Cut Corn. It tastes like it’s fresh off the cob, without all the mess of the cob. I honestly don’t know if I’ll ever buy corn on the cob again, as long as I have some of this stuff in the freezer. Using some oil, cook the corn in a cast iron skillet, either over a fire or on a stove.

Once the corn is nice and hot, add a little bit of sour cream, lime juice, crumbled queso fresco, chili powder, and cayenne pepper. If you desire salt and pepper, add that, too. Make sure not to overdue the chili powder or cayenne pepper, unless you like spicy.

Then you sit back and enjoy it. We made way too much, so I froze the extras, and it thawed really nicely.

    I don’t think I’d go for previously-frozen corn that was then thawed, cooked, refrozen, and re-thawed. Kinda pushing the limit to my freeze/thaw cycle tolerance but if you like it hey.

      Unless you’re extremely picky, the amount of thawing in this recipe shouldn’t be a problem. Thawing stuff is normally only a problem if its freezer burnt.

    Well that looks quite delicious. We make a rice, black bean, corn dish that has the same spices so I think we will like this dish! We will give it a go. Thanks.

    It sounds good except for the lime juice. I only like lime in pie.

    Hi Elly, thanks for this recipe. I hadn’t really thought about other ways of making corn, other than warming up a can of it 🙂 But it might be a bit too spicy for my 18-month old son.

    I have a question not related to corn. I hope that is okay. I was wondering what, according to your faith, happens to people who do not say that they are a sinner, that Jesus died on the cross for them, and therefore will have etarnal life in heaven (do I say that correctly?) Do they go to hell? And what about people who have never had the chance to get to know Jesus? There were in history, and perhaps still are, areas on our beautiful earth whith people living there who have never heard about christianity. And what about children who are just too young or not ready to accept Jesus in their heart?

    I myself am not a Christian, but I am interested in learning more about it.

      Hi Suzanne! Those are great questions. Thanks for asking. I will type up some answers and get back to you. 🙂 The last question, what happens to children who are too young to accept Jesus into their hearts, has a quick answer, so I’ll share that right now. I believe that the Bible indicates that they go to heaven for eternity, as do adults who are cognitively challenged and unable to make a decision to follow Jesus. The book Safe in the Arms of God does a great job laying out Biblical references on the subject.

      Hi Suzanne,
      I’m so sorry that it took so long to respond. Sometimes it’s hard for me to find the time to sit down and write thoughtful responses to comments. The Bible teaches that if someone does not accept Jesus’ free gift of salvation, he or she will go to hell (as long as they are of an age or mental ability that allows them to make that decision). Romans 1:20 says “For since the creation of the world His invisible attributes are clearly seen, being understood by the things that are made, even His eternal power and Godhead, so that they are without excuse.” God’s power is on display in His beautiful creation. He doesn’t hide it, but He puts it on display for all to see. Even those few people who have never encountered a Christian or heard about Jesus in any way are able to see God’s power on display in creation.

      God is perfectly righteous, which means He cannot exist among unrighteousness. So in order for someone to be with him for eternity in heaven, that person must become righteous. By accepting God’s free gift of salvation, all our wrongdoings are covered by Jesus’ sacrifice. God washes our sins as white as snow. When God looks at a Christian, he sees perfect righteousness. And as long as we are seeking to follow God with our whole hearts, even our mistakes (sins) on this earth are covered by Jesus’ righteousness.

      God desires that all would come to know Him, and His gift of salvation is free. Ezekiel 33:11 says: Say to them: ‘As I live,’ says the Lord God, ‘I have no pleasure in the death of the wicked, but that the wicked turn from his way and live. Turn, turn from your evil ways! For why should you die, O house of Israel?’ The Bible also says that everyone who seeks God with their whole heart will find Him (Jeremiah 29:13).

    I am going to attempt to make this for my nephew’s birthday in a couple of weeks. He likes corn and Mexican food, so he will probably love it. There is no Trader Joe in this area, so I will do my best with whatever frozen corn Kroger has to offer.
