Mango-Broccoli Salad Recipe

Many of you know that I love salad. When I’m in a hurry, you’ll often find me chowing down on a heap of raw spinach leaves or romaine lettuce, drizzled with one of my many homemade salad dressings, but when I have the time, I enjoy being more creative.

This salad is a tasty way to enjoy broccoli. It’s easy to make and is the perfect addition to a holiday spread or as part of a weekday meal.

Mango-Broccoli Salad

Ingredients

  • 4 cups chopped fresh broccoli
  • 1-2 large ripe mangoes (peeled, pitted, and diced)
  • 1/2 cup red onion or chives, finely chopped
  • 3/4 cup buttermilk ranch salad dressing
  • 3 Tbso orange juice
  • 1 Tbsp prepared horseradish
  • 11 ounces canned mandarin orange sections, drained or sliced, fresh clementines
  • 3/4 cup cashews

Instructions

  1. Combine broccoli, mango, and onion in a large bowl.

  2. Combine ranch dressing, orange juice, and horseradish in a small bowl.
  3. Add the dressing mixture to the broccoli mixture, and toss. Top with orange sections.

  4. Mix in cashews immediately before serving to prevent them from becoming soft and mushy.

    Is that a lot of horseradish? I don't normally use it as an ingredient, but I am familiar with it. A Tbsp. seems like it would be a lot. It's one of those things where a little can go a long way. And if you buy it, how do you use up the rest of it?

      It sounds like a lot, but you hardly notice it. You can often find it in small containers at the grocery store. It goes great on roast beef.

    1 Tbsp is not alot of horseradish

    You can use horseradish with steak. Just dip your steak in horseradish it's really good and if you have a cold it opens up your nose.

    I have a question. Do you know where you can buy really nice medium sized rectangular mirrors? I don't want them to be to big or too expensive. Any help will be great! Thanks!!

      When we got married, I bought a nice mirror with a wooden border from an antique store for $14. You might also check thrift stores.

      I've had both straight-edge (for framing) and beveled-edge mirrored glass (mounted on Masonite backing for hanging) made to size at a glass shop. Look in the phone book or online for a local shop. If nothing else, you might get a price quote for comparison purposes. Also, this time of year, anywhere that sells dorm furnishings might have framed mirrors (Target, home organization stores, etc.).
