Easy Breakfast Hash While Stuck at Home

With grocery stores being cleaned out due to coronavirus, it can be tough to come up with meals for the family. Here is a great breakfast/brunch recipe that uses whatever you have in the fridge.

We call it breakfast hash. The only ingredient you absolutely have to have is potatoes. Use one potato per person you are cooking for, plus a couple extras, in case someone whats seconds. Start by dicing the potatoes into ¼-inch cubes. 

You can use any type of pan, but I would highly recommend a good ole’ cast iron skillet. Heat the skillet for a minute or two over medium heat with just a little oil (I use olive oil). Then add the potato cubes, and make sure they are spread out evenly over the bottom of the pan. Cover, and stir the potatoes around every few couple so they cook evenly. Cook them until they are golden brown. 

It’s up to the genius chef within you to decide what else to add. If you are low on food due to coronavirus, just mix in whatever you can find in the fridge. Mr. Handsome likes to add bacon, eggs, and cheese. I like mine with just a little salt and pepper. The sky is the limit. If you are adding meat, eggs, or veggies, cook them ahead of time or in another pan before you add them to the hash. Here are a few options:

Cheese

Mushrooms

Spinach

Chopped peppers

Onions

Herbs (garlic, oregano, etc)

Spices (pepper, salt, cayenne, paprika)

Bacon

Eggs

Sausage

Ground beef

Chicken (cubed pieces)

Hot dogs (if you are desperate)

    Looks good. I think I would roast my potatoes. My kids like hotdogs in mac/cheese. My friend would make this for them whenever she would keep them for me. Not me. I like to roast potato logs and have chili, cheese and sourcream with it.

    Why does everyone put salt in everything. Putting salt in things causing to you to have a heart attack . I guess peoplewant to died.

      I agree. I don’t put salt in many things at all. If I do, it’s a sprinkle of a good quality mineral salt, and I can count on one hand the things I might add it to. With flavorful imported salts (not that blue box with the umbrella girl), the tiniest amount is all you need, added at the end on top where you can taste it. I use lots of different herbs and spices, fresh or dried, instead. Pepper and powdered garlic are favorites (not garlic salt), as are salt-free herb blends. The recipe above would probably benefit from one of those. I’m always on the lookout for no-salt or very low salt alternatives to packaged food. I like to see sodium mg numbers from 100 to zero per serving. I’ve been cooking this way for 30 years or more and don’t miss salt one bit.

    I couldn’t even get potatoes last week! Everything is almost back to normal now where I live. I was able to get rice, potatoes and sandwich bread. Oatmeal is our breakfast go-to. Oatmeal is kind of like hash, you can add anything. Strawberry, peach, cinnamon, brown sugar, maple syrup, chia seeds, nuts, coconut….

      That reminds me, I know two people who put eggs in the their oatmeal (savory) and you can also add protein powder. Also forgot to mention apples and peanut butter, I eat it like that a lot.

    Yuck on Oatmeal. Oatmeal looks like throw-up to me.
    I usually have 2 eggs 2 piece bacon and grapefruit juice.

    This looks really good Ellie. Next time I do my Walmart online shopping, I’ll need to get potatoes to try this. They’ve been hard to find with people buying so much. How is your husband doing needing to deal with patients? I would be praying for a hedge of protection over him needing to be so close to his patients. You can’t do video appointments with dental work.

      Thank you for your prayers! Dentists in Tennessee are still seeing emergency patients, so there is a bit of a risk. We are trusting in God’s will.

      Do you not know about the coronavirus outbreak?! Most of the United States is under shelter-in-place orders. Therefore, most Americans are pretty much stuck at home for the next few months. People can only leave their houses if they are an essential worker who cannot work from home, going to buy food, taking care of a family member, or going to seek emergency medical care. Walking or biking around the block for exercise is permitted too. However, restaurants are not open for dine-in service, and gyms, parks, schools, stores other than grocery stores, and libraries are closed until further notice. In my state (NJ), you can be arrested and fined for hosting social gatherings. People cannot even have funerals! People’s livelihoods and suffering and millions are out of work. Most Americans are not enjoying being at home in the least. I’d give anything to be able to go into work and see my students again,

    We actually have a name for that dish. In Swedish we call it ”pyttipanna”. We usually make it when we have boiled left-over potatoes. That is, the potatoes are first boiled, then diced and fried in a pan. I’ve never tried to fry raw potatoes. Anyway, usually we dice sausage and mix it with the potatoes, but you can choose whatever you find in the fridge. A fried egg on top is often made, but I don’t like fried eggs. ”Pyttipanna” is a bit like pizza was from the beginning, you choose whatever you have in the fridge and throw it together :-).

    I do something similar for breakfast; potatoes, eggs, whatever veggies I have, and cheese on top. Nice name for it, lol. So, you and Mr Handsome take turns going grocery shopping, or does one of you do it primarily? They only want one person shopping at a time; I can’t imagine what a single parent of little ones might do. Trying to think if I know any, but the only single parents I can think of have at least teenagers so they can stay home.

      I usually do all the grocery shopping. Little Buddy enjoys being out and about. Although with the coronavirus pandemic, we have been utilizing the pickup option from Walmart, so we haven’t been going into the store.
