Easy Breakfast Hash While Stuck at Home

With grocery stores being cleaned out due to coronavirus, it can be tough to come up with meals for the family. Here is a great breakfast/brunch recipe that uses whatever you have in the fridge.

We call it breakfast hash. The only ingredient you absolutely have to have is potatoes. Use one potato per person you are cooking for, plus a couple extras, in case someone whats seconds. Start by dicing the potatoes into ¼-inch cubes. 

You can use any type of pan, but I would highly recommend a good ole’ cast iron skillet. Heat the skillet for a minute or two over medium heat with just a little oil (I use olive oil). Then add the potato cubes, and make sure they are spread out evenly over the bottom of the pan. Cover, and stir the potatoes around every few couple so they cook evenly. Cook them until they are golden brown. 

It’s up to the genius chef within you to decide what else to add. If you are low on food due to coronavirus, just mix in whatever you can find in the fridge. Mr. Handsome likes to add bacon, eggs, and cheese. I like mine with just a little salt and pepper. The sky is the limit. If you are adding meat, eggs, or veggies, cook them ahead of time or in another pan before you add them to the hash. Here are a few options:

Cheese

Mushrooms

Spinach

Chopped peppers

Onions

Herbs (garlic, oregano, etc)

Spices (pepper, salt, cayenne, paprika)

Bacon

Eggs

Sausage

Ground beef

Chicken (cubed pieces)

Hot dogs (if you are desperate)

Church Under Quarantine

With most churches suspending services and programing due to the coronavirus pandemic, Sunday mornings are now looking very different for our family. But we still want to respect the Lord’s Day and avoid treating it like any other day in quarantine.

This is one of the times when social media and technology actually make life better. Many churches are still broadcasting their sermons online, so you don’t have to miss out on a good message. If your church doesn’t have the capability to stream, there are plenty of podcasts and videos available on the web.

We started the morning with a homemade Sunday brunch and then put on some coffee and headed into the living room for church. (Our current favorite coffee is Espresso d’Oro by Dallmayr.) Mr. Handsome played a few worship songs on the guitar, and even Little Buddy tried to sing along. He provided a resounding chorus of “ba-ba-bas.”

We listened to a podcast sermon by pastor John Piper, which can be found via his ministry website or on the smart phone podcasts app. We highly recommend John Piper’s messages if your church does not broadcast sermons.

Coronavirus Painting Project

The coronavirus pandemic has impacted the lives of every person in the United States and worldwide. Little Buddy and I have stayed home for four days, and Mr. Handsome has only ventured out when necessary.

While we are cooped up at home, our goal is to check a bunch of projects off our to-do list, and we started with our bedroom (see video below). Since we moved in almost two years ago, I have been looking forward to covering up the beige/tan color with Repose Gray from Sherwin-Williams. When Little Buddy was a few months old, I pained my office the same color and touched up the white trim, and it puts a smile on my face every time I walk through the door.

Coronavirus

Businesses across the United States limiting hours or closing completely, colleges forcing students to leave their dorm rooms and return home, schools shutting their doors for weeks, and the federal government encouraging citizens and residents to avoid gatherings of 10 or more people. Oh, and did I mention the national toilet paper shortage? What a strange week this has been, and it’s only Monday!

Going to the grocery store and seeing dozens of empty shelves is a very surreal experience. One of our biggest concerns has been whether we will have enough food and milk for Little Buddy. Mr. Handsome and I can eat beans and rice if we have to, but Little Buddy is at the age where he is a bit picky. And on top of everything, he is teething, so he only eats soft foods.

I am curious to hear how coronavirus has impacted your life. Are you working from home? Trying to keep your kids busy indoors? And most importantly, do you have enough toilet paper?

Our thoughts and prayers are with the elderly and those with compromised immune systems. During this confusing time, we rejoice that God is still on the throne and still worthy of our praise. Coronavirus did not take Him by surprise. While there is sin and death in our world, God sees the bigger picture and has a plan to redeem and restore. Amidst the chaos, Mr. Handsome and I are grateful to have a loving, ever-present God.
