Making Nachos With Little Buddy

Did you watch the Super Bowl last night? Who were you pulling for? We had a few family members over and enjoyed various Super Bowl foods. Little Buddy helped Daddy make nachos for everyone. Here’s a post from Mr. Handsome:

Growing up in a family of nine, nachos meant heating up a glass jar of Tostitos nacho cheese in the microwave and dipping chips in it. It was absolutely delicious, but it was also full of preservatives and lacked any sophistication and creativity.

When we got married, Ellie introduced me to the world of homemade nachos with tons of delicious toppings, like peppers, tomatoes, beans, and sour cream. We posted the recipe back in 2017.

For the meat, Little Buddy and I used pulled pork that we bought at a fundraiser for the local wrestling team. It’s a really neat fundraiser where all the boys on the team get together with their coach and smoke a bunch of pork shoulders on an open pit fire. We were happy to support the team and end up with a delicious meal.

The only hiccup occurred when I chopped up a tomato and put in on the nachos. Unfortunately, Little Buddy had thought that the tomato was for him to eat, and he started crying when I put in on the nachos. It took several minutes to calm him down and get him another tomato. Also, the fact that our son likes to eat raw tomatoes is a testament to all the hard work that Ellie has done to help him enjoy healthy foods. What kid just eats raw tomatoes? Until we had our son, I had never met one.

    My 18 month old LOVES tomatoes. He will almost always eat them first from his bowl…unless there is also avocado involved.

      That’s great! I’m always impressed by kids who enjoy tomatoes. I love them now but definitely did not when I was a kid.

      Ellie is s very wise mom.
      It’s good she’s getting the boy to like tomatoes.
      It must’ve kind of hard for a child to overdose on sugar eating tomatoes!
      And Mr Handsome you are a wonderful dad getting your child hands on involved! Cute little paws!

    My son used to eat tomatoes like they were apples when he was little. He’s 28 now and he still likes tomatoes, but doesn’t eat them unless they’re in salad, tacos, or burgers, etc.

    I love eating raw tomatoes I’ll dip my tomatoes in Mayonnaise and ketchup salad dressing. It really good. Or I put my tomatoes in salads too.

    That’s great that he likes tomatoes! I think I have taken it for granted that all my kids love raw veggies – peppers, tomatoes, cucumbers, carrots (the little one is still getting there to like carrots) – if you put them on a plate it will be half gone before the meal has started. I am of the opinion that it’s because here in Europe we start with giving the babies vegetables (I started with pumpkin) as baby food, then move on to a veg-meat-potato mix. I made my own, mixing up a certain ratio of cooked veggies with I think half the potatoes and a small bit of red meat or fish. This is their lunch and main meal. They really learn to love it. Only later you start adding a dinner or breakfast of grains and milk.

      That’s very impressive. I completely agree. With Little Buddy, I started him on pureed vegetables at about 4.5 months, although he only got a small amount each day until 6 months. I did add some baby cereal mixed with breast milk at around 4-5 months because he was such a big eater. LOL. Then I slowly added veggie and fruit pureed combos, but I didn’t give him any pureed fruit bit itself until he was over a year old. Other than prunes when he needed help with bowel movements.

    When my granddaughter was a toddler she like tomatoes off the vine. Every year she and her Dad would plant cherry tomatoes for her to enjoy and in the morning she would pick a few to eat while on her way to school.

    Those nachos look amazing! I might try to make those for lucnh today lol! I love to eat tomatos raw! Does little buddy like avocado?

      Thank you! He loves avocado. Unfortunately Mr. Handsome does not, although he likes my sister-in-law’s guacamole.

    I know Little Buddy was being supervised, but seeing that can lid made me shiver. They can cause some NASTY cuts! Speaking from experience and emergency room visit.
